Pesquera Crianza es un vino tinto de Bodega Pesquera con denominación de origen Ribera del Duero. El clima mediterráneo con carácter continental, con veranos secos e inviernos rigurosos, condiciona la crianza de la uva de la uva Tempranillo con la que se elabora este tino.
Se caracteriza por su color cereza picota, aroma intenso a fruta madura y elegante sabor.
Un vino tinto clásico de la D.O. Ribera del Duero perfecto para maridar con quesos de oveja, cordero, arroces de carne, carnes rojas a la parrilla, asados y estofados.
Bodega Pesquera forma parte de las cuatro bodegas que forman el legado vinícola de su fundador, Alejandro Fernández. Todas ellas, tienen en común el amor por la vinicultura, lo que las ha convertido en toda una leyenda de la zona de la Ribera del Duero.
Una bodega conocida por sus numerosos premios y reconocimientos obtenidos en sus más de 40 años de trayectoria creando grandes vinos reconocidos en todo el mundo.
Desde sus comienzos como bodeguero Alejandro Fernández es considerado un revolucionario y visionario en la elaboración de vino en la Ribera del Duero. De este modo, los vinos tintos Pesquera han sido desde los años 80 un modelo a seguir por otros viticultores y bodegueros.
Aunque sus comienzos no fueron fáciles, en los años 70,el tiempo terminó dando la razón al empeño y tesón del joven Alejandro Fernández. Tras más de 10 años de trabajo, el pequeño lagar de piedra del siglo XVI en el que comenzó su proyecto fué el germen de una de las bodegas más prestigiosas de España.

VISTA: Aspecto limpio y brillante. Bonito y elegante color cereza intenso.
NARIZ:En nariz presenta una intensidad aromática media-alta con recuerdos a frutas rojas como la frambuesa y la grosella.
BOCA: Entrada en boca fresca con un paso sedoso y muy goloso, acidez perfectamente integrada y un tanino poco marcado y muy agradable. En el retrogusto (retronasal) se percibe fruta negra como la mora. La madera se percibe muy bien integrada con esas notas de tostados y vainillas propios de una crianza en roble americano.

COMBINA CON: Carne a la brasa, asados de cordero lechal, cochinillo y ricos productos de nuestra gastronomía como el Jamón Ibérico de Bellota.
VIÑEDO Y ELABORACIÓN
DESCRIPCIÓN:
Dentro del término municipal de Pesquera de Duero, con orientación sur a una altitud de más de 800 metros.
SUPERFICIE: 200 hectáreas total.
SUELO: Suelos heterogéneos, mayoritariamente franco-arcillosos con presencia de caliza.
CLIMA: El año comenzó con un invierno normal que dio paso a una primavera suave, con alguna helada en el mes de mayo sin mayores consecuencias para las viñas. El año en general fue seco, sobre todo durante el ciclo vegetativo, lo que marcó el desarrollo de las plantas, así como el tamaño de racimos y uvas.
El régimen de temperaturas durante la época de maduración fue muy favorable, con esa marcada amplitud térmica que caracteriza a la Ribera y que hace posible la magnífica madurez fenólica de nuestros tempranillos.

Alguna precipitación durante el mes de septiembre ayudó a ralentizar el final de la maduración pero sin afectar a la calidad de la uva. Todos estos condicionantes propiciaron una que se desarrolló en las fechas habituales y de excelente calidad.
VENDIMIA: La recogida fue sana y con una calidad excepcional.
ENVEJECIMIENTO: Mínimo 12 meses en barrica de roble americano y resto en botella hasta su salida al mercado.

Whole pieces:
In the case of whole hams or shoulders, you receive the whole piece wrapped in waxed greaseproof paper, protective cloth cover and in box/case with handle, at no extra charge.
Knife-cut pieces:
We will send your knife-cut ham or shoulder in thin slices in 100 gram sachets and vacuum packed. It should be kept in the fridge. Although it should always be taken out at least one hour before consumption. Shelf life of 6 months from delivery.
Includes the cut bones, useful for making broth or stews.
Sausages and cheeses:
Any sausage or cheese, whether cut or in whole pieces, will be sent vacuum packed.
It should be kept in a cool, dry place. It is always advisable to temper before consumption. Shelf life depends on the product. Normally at least three months.
Wines and oils:
Both wines and oils should be sent properly protected.
Preserving unopened Iberian ham
If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.
In this way the ham can last for months without any problems.
Preserving Iberian ham once it has been opened
When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.
Preserving whole cured meats
If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.
The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.
Preserving sliced sausages
The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
