Mature medieval sheep´s cheese 3 kg.

The particularity of the medieval ways of refining the Dómine picón style cheeses was the way they were cured and aged by coating them with a fatty mixture that gave the cheese its curing and durability.

In fact, these cheeses were a luxury product which was sent to the Creole aristocratic elites around the 16th century. This preservation was provided by a coating of lard and the typical grassy herbs of the dry mountains of La Mancha, such as thyme and rosemary.

Then it was also watered with extinct resinous wines, which in this company were replaced by a brandy of national origin, according to them, of very high quality. Later, ingredients such as truffles were added, something that was not used in the past but which has been used with the aim of deepening the nuances and aromas of these cheeses.
