Tobía Selección de Autor 2017

This 2017 Rioja harvest was the earliest until then, it was finished by October the 10th!
2017 harvest has given us high quality grapes where vineyards from coldest areas and with moderate yieldings stood out. It can be stated that both sanitary and vegetative states have been excellent due to very favourable climatic conditions during ripeness period with lack of plagues and diseases. This allowed us to carry out a selective harvest from different spots to reach an optimum degree of ripeness.
Another remarkable and very important fact linked to the quality of this harvest is the lesser weight and size of the grapes thus improving the proportion skin/pulp.
• Tempranillo (70%) comes from a vineyard located in San Asensio, planted in 1965, in goblet training. Altitude: 480 m. Calcareous clay soil with gravel. Northfacing. Climate: purely Atlantic.
• Maturana Tinta (15%). The vineyard is located in the area Hormilla- San Asensio.
Altitude: 610 m. Soils: Calcareous clay soil, very stony.
• Merlot (15%) comes from an experimental vineyard Rioja DOCa located in Haro, planted in 1990, conducted in trellis. Altitude: 590 m. Calcareous clay soil with gravel. Orientation: south-east. Atlantic climate.
• Meticulously hand selected from the three vineyards and minimalist winemaking process separately.
• Whole berry cold maceration is carried out after destemming at controlled temperature.
• Alcoholic fermentation is carried out into “smart tanks” at a controlled temperature.
• Malolactic fermentation took place in oak barrel.
• Aged for 18 months in the same new French fine-grained oak barrel.
• Stabilization took place in the barrels, without any clarification additive.
• Bottled without filtration so as to respect the quality of the wine.
• Total production: 6,600 bottles of 75 cl.
Tasting Notes
Brilliant and clear aspect. Cherry red colour with intense burgundy rims.
Intense and elegant symphony of menthol and balsamic aromas, well blended of
wild black and red berries on a background of undergrowth. The sweet aromas of fruit give way to the spiced scent like white pepper, nutmeg and cinnamon shrouded by touches of cocoa and cedar.
The palate is broad, fresh, pleasant and velvety. A cheerful and elegant wine.

Preserving unopened Iberian ham

If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.

In this way the ham can last for months without any problems.

Preserving Iberian ham once it has been opened

When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.

Preserving whole cured meats

If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.

The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.

Preserving sliced sausages

The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
