Torre de Oña es el proyecto de la familia de La Rioja Alta hecha realidad en la Rioja Alavesa. Vinos únicos, exclusivos, elaborados con viñedos propios excepcionales y con el acento de los modernos vinos de la Rioja Alavesa. Un lugar único que goza de un indudable potencial para la elaboración de vinos capaces de transmitir, como ocurre en los grandes “châteaux”, las exclusivas características de una finca privilegiada: serenidad, elegancia, terruño, intemporalidad
Martelo 2014 representa un punto de inflexión en la bodega riojana, con un nuevo estilo que han estado puliendo y definiendo con el objetivo de extraer la esencia del terruño. (en el mercado internacional se comercializa como Finca Martelo).
Elaborado con tempranillo (95%) y el resto con mazuelo, garnacha y viura. Viñedos de más de 60 años, en laderas con orientación norte-sur. Esta segunda cosecha de Finca Martelo se caracterizó por un ciclo vegetativo con una climatología muy favorable que cumplió las espectativas de una gran añada. un vino con un excelente equilibrio en graduación alcohólica y acidez, destacando por la intensidad y tipicidad de los aromas varietales.
Vendimia manual. Cámara frigorífica hasta alcanzar los 4ºC. Despalillado y estrujado. Macerado durante 9 días. Maloláctica en barricas de roble americano y francés con batonnage semanal. Crianza durante 24 meses en barricas de roble americano (80%) y francés (20%).

Su crianza fue de 18 meses en roble francés nuevo (40%), francés de dos vinos (35%) y del Cáucaso nuevo (25%) siendo trasegado en tres ocasiones por el método tradicional. Se embotelló en octubre de 2016.
Desde 1995, La Rioja Alta, S.A. lidera este proyecto. Apenas unos meses después, comienza a comercializarse la primera añada de Barón de Oña bajo los apellidos de La Rioja Alta, fue un Reserva de la cosecha 1989. A partir de ese momento se inicia la compra de hectáreas colindantes a la Finca San Martín, por lo que en la actualidad Torre Oña posee 65 hectáreas de viñedo. En el año 2003 se lleva a cabo una ampliación de la bodega, reubicando la nave de etiquetado en un nuevo espacio, además se rehabilita y adapta la Ermita de Santiago, del siglo XVII, situada dentro de la finca.
Actualmente, Torre de Oña cuenta con 2.500 barricas, de las cuales un 68% son de roble galo procedentes de la zona de Allier y de Borgoña, un 16% es de roble americano, y el 16% restante de roble caucásico. En estas naves realizan los trasiegos de barrica a barrica que, al igual que ocurre en las demás bodegas del Grupo, se realizan cada seis meses por el método tradicional y a la luz de la vela.
Este proyecto arranca en 1985, cuando Leandro Vázquez, un hombre de negocios de origen cubano y gran apasionado por el mundo del vino, adquiere inicialmente 15 hectáreas de viñedos en Páganos (Álava), localidad perteneciente al municipio de Laguardia. En año 1987 D. Leandro Vázquez funda, junto con otros socios locales la sociedad “Camino de Laguardia, S.A.” que, con sede inicial en Irún, inicia los trámites para la adquisición de terrenos y para el comienzo, ese mismo año, de las obras de construcción de la bodega. En 1988, la sociedad Camino de Laguardia cambia su denominación social por la actual Torre de Oña, pero mantiene su sede social en Irún (Guipúzcoa).

Whole pieces:
In the case of whole hams or shoulders, you receive the whole piece wrapped in waxed greaseproof paper, protective cloth cover and in box/case with handle, at no extra charge.
Knife-cut pieces:
We will send your knife-cut ham or shoulder in thin slices in 100 gram sachets and vacuum packed. It should be kept in the fridge. Although it should always be taken out at least one hour before consumption. Shelf life of 6 months from delivery.
Includes the cut bones, useful for making broth or stews.
Sausages and cheeses:
Any sausage or cheese, whether cut or in whole pieces, will be sent vacuum packed.
It should be kept in a cool, dry place. It is always advisable to temper before consumption. Shelf life depends on the product. Normally at least three months.
Wines and oils:
Both wines and oils should be sent properly protected.
Preserving unopened Iberian ham
If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.
In this way the ham can last for months without any problems.
Preserving Iberian ham once it has been opened
When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.
Preserving whole cured meats
If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.
The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.
Preserving sliced sausages
The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
