Un domaine de 300 ha. qui entoure la cave Marqu\u00e9s de Murrieta situ\u00e9e dans la Rioja Alta.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Vendanges manuelles<\/strong><br \/>\nNous avons effectu\u00e9 une vendange manuelle s\u00e9lectionn\u00e9e, en palettes de petite capacit\u00e9 pour pr\u00e9server la qualit\u00e9 des raisins. Le Tempranillo a \u00e9t\u00e9 r\u00e9colt\u00e9 les 17 et 22 septembre et le Mazuelo le 22 septembre.<br \/>\n<strong>Vinification<\/strong><br \/>\nLes <a href=\"https:\/\/es.wikipedia.org\/wiki\/Uva\" target=\"_blank\" rel=\"noopener\">grappes<\/a> sont \u00e9grapp\u00e9es et, apr\u00e8s \u00eatre pass\u00e9es par la table de tri, les vari\u00e9t\u00e9s sont ferment\u00e9es s\u00e9par\u00e9ment dans des cuves en acier inoxydable avec contr\u00f4le de la temp\u00e9rature.<br \/>\nLa cuvaison dure environ 10 \u00e0 12 jours, pendant lesquels sont effectu\u00e9s des remontages, des pigeages et des d\u00e9lestages continus pour favoriser le contact entre le raisin et la vigne.<br \/>\nLe d\u00e9lestage favorise le contact du mo\u00fbt avec les peaux et une extraction lente et naturelle des ar\u00f4mes et des polyph\u00e9nols.<\/p>\n<p>Apr\u00e8s la fermentation, les parties solides des raisins sont press\u00e9es dans des pressoirs verticaux, selon un processus doux et lent qui favorise l&rsquo;extraction de la couleur et des tanins m\u00fbrs de la peau.<\/p>\n<p><strong>Proceso de crianza<\/strong><\/p>\n<p>La tempranillo envejece durante 34 meses en barricas de roble americano de 225 l y la mazuelo durante 34 meses en barricas de roble france\u0301s de 225 l. Una vez decidido el ensamblaje, el vino permanece en depo\u0301sito de hormigo\u0301n 20 meses hasta su embotellado.<\/p>\n<p>Los racimos se despalillan y, tras su paso por la mesa de seleccio\u0301n, las variedades fermentan por separado en depo\u0301sitos de acero inoxidable con control de temperatura.<\/p>\n<p>El encubado tiene una duracio\u0301n de aproximadamente 10-12 di\u0301as durante los cuales se realizan continuas labores de remontados y delestage para favorecer el contacto del mosto con los hollejos y provocar una lenta y natural extraccio\u0301n de aromas y polifenoles, proceso suave y lento que favorece la extraccio\u0301n del color y taninos maduros del hollejo.<\/p>\n<p><strong>Nota de cata<\/strong><br \/>\nUn infinito y complejo rango de aromas definen este Castillo Ygay 2011 que evoca picota madura, ara\u0301ndanos y cassis con refinados toques demonte bajo, hierbas mediterra\u0301neas, pimienta negra, clavo y moca.
