On choisit essentiellement des morceaux de viande maigre, dont certaines sont de premi\u00e8re cat\u00e9gorie et prises pr\u00e8s du filet, ou de l&rsquo;\u00e9chine. Les pi\u00e8ces de \u00ab\u00a0morcon\u00a0\u00bb sont mises \u00e0 reposer\u00a0 jusqu&rsquo;\u00e0 atteindre leur point de maturation dans des s\u00e9choirs naturels entre quatre et six mois.<\/p>\n<p>Il semblerait que ce nom provienne du type de boyau traditionnellement employ\u00e9 pour cette charcuterie, appel\u00e9 morcon ou aveugle, c&rsquo;est \u00e0 dire le gros instestin.<\/p>\n<p>Ingr\u00e9dients : viande maigre de porc s\u00e9lectionn\u00e9e, viande de\u00a0 (Petit filet) de porc ib\u00e9rique,\u00a0 sel marin, ail et paprika.
