Of great aromatic power, first of fruity character (cherry, currant, red plum) giving way then to balsamic and spicy notes (pepper, licorice, clove, vanilla, toasted caramel and nutmeg). Fresh and balanced in the mouth, with fine and silky tannins. Ample aftertaste that combines red fruits and spices with a fresh and long character.

Viña Ardanza Reserva 2016
The historic frost on April 28 affected some of our estates, but not our vineyards in Cenicero (Tempranillo) and Tudelilla (Garnacha). Although the quantity produced for this label was lower than usual, the ripening was perfect, allowing us to produce a Viña
Ardanza with remarkable freshness and a great aging potential due to its strong polyphenolic content. Fine and elegant.
The Tempranillo (80%) comes from 30-year-old vines in our Cuesta (Cenicero) and Montecillo (Fuenmayor) vineyards. The Garnacha (20%) is from La Pedriza in Tudelilla, Rioja Oriental, a 40-hectare estate with unbeatable conditions for growing this variety.
Manual picking in boxes, with a careful selection of bunches in the vineyard. Garnacha was harvested 15 days later. The grapes are transported refrigerated to the winery to preserve their quality. After a second optical selection table, alcoholic fermentation (at 27ºC) and malolactic fermentation are carried out naturally.
Ageing always in our own American oak barrels. 36 months for Tempranillo and 30 for Garnacha to prevent oxidation. 20% is new oak, and the rest is from 3 wines. Five traditional barrel-to-barrel rackings were performed by candlelight to manually separate sediments and avoid aggressive filtering. Bottled in March 2021.

Notas de cata.
“Color rojo granate intenso, con borde limpio. En nariz destaca por su gran intensidad aromática, con notas especiadas y balsámicas de regaliz, clavo, nuez moscada y pimienta negra, envolviendo un sutil recuerdo de frutas rojas maduras: cereza licorosa y mermelada de frambuesa. Su boca es muy equilibrada, fresca, con gran amplitud de sabores y unos taninos suaves y redondos, que dan paso a un especiado y balsámico retrogusto final. Un Viña Ardanza en plenitud y con una larga vida por delante.”
Aroma muy notable, con recuerdos especiados, balsámicos y de frutas maduras que,tras agitar la copa, descubre toques de pimienta negra, regaliz dulce, nuez moscada,café, vainilla y canela. Pleno de sabores, amable acidez y equilibrio y taninos muy pulidos que realzan su estructura armoniosa.
Retrogusto complejo y elegante con recuerdos especiados y balsámicos. Para disfrutar ahora y con larga vida por delante. Tan sólo superado por su poderoso hermano Viña Arana Gran Reserva 2015

Por lo tanto el Viña Ardanza Reserva 2016 se trata de un vino con frescura, intensidad, sofisticación y por encima de todo, un gran nombre y potencial de guarda. En definitiva un vino excelente.
La uva Tempranillo (78%) procede de nuestras fincas La Cuesta y Montecillo, de 30 años de edad, ubicadas en Fuenmayor y Cenicero y la Garnacha (22%) proviene del término La Pedriza en Tudelilla (Rioja Baja) a 550 m sobre el nivel del mar.
Esta finca de 67 has cuenta con unas condiciones inmejorables para el cultivo de esta variedad y está plantada sobre un suelo muy pobre cubierto de cantos rodados que, con reducidos rendimientos (inferiores a 5.000 kg /ha), nos ofrece una uva de gran tipicidad varietal, muy rica en aromas y agradable y fina estructura.

Whole pieces:
In the case of whole hams or shoulders, you receive the whole piece wrapped in waxed greaseproof paper, protective cloth cover and in box/case with handle, at no extra charge.
Knife-cut pieces:
We will send your knife-cut ham or shoulder in thin slices in 100 gram sachets and vacuum packed. It should be kept in the fridge. Although it should always be taken out at least one hour before consumption. Shelf life of 6 months from delivery.
Includes the cut bones, useful for making broth or stews.
Sausages and cheeses:
Any sausage or cheese, whether cut or in whole pieces, will be sent vacuum packed.
It should be kept in a cool, dry place. It is always advisable to temper before consumption. Shelf life depends on the product. Normally at least three months.
Wines and oils:
Both wines and oils should be sent properly protected.
Preserving unopened Iberian ham
If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.
In this way the ham can last for months without any problems.
Preserving Iberian ham once it has been opened
When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.
Preserving whole cured meats
If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.
The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.
Preserving sliced sausages
The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
