Bernard Remy Carte Blanche

Family vineyards located in the three most prestigious areas of Champagne: Côte de Blancs, Marne Valley and Montaigne de Reims.
Soils of different natures, although most of them are argilo-calcareous in composition.
Harvested by hand in mid-September, in 50 kg crates.
Vinification. Gentle extraction of the free-run juice in a 4,000-kilogram wooden press. The first fermentation of the base wine is carried out in stainless steel tanks at a controlled temperature.
The second fermentation lasts for an average of 2 months, before ageing in rimas. At the end of the winter the ‘chef de cave’ proceeds to the composition of the ‘cuvée’ by blending.
Ageing
Aged for 2 years.
