From Cumbres Mayores, located in the heart of the Huelva mountain range. Shoulders come from Iberian pigs fed on acorn and grass in the meadows during the mast-feeding season.

Small shoulders acquire a greater taste during the curing period due to the water and volume loss process, since they are smaller. Small shoulders mature in natural caves for at least two years. The production is limited.
This Shoulder comes from iberian pigs which have been raised in liberty in our farms López Pascual, an incomparable setting where year after year comes the “montanera”, time of the best alimentation for the pigs: the acorns (bellota).
The patience of our craftsmen, a pinch of salt, and the air of the mountains of Cumbres Mayores help our centenarian dryer to create this exclusive and special Shoulder that the client of López Pascual recognizes through his satisfaction.

López Pascual offers the very best of Spanish gastronomy and this 100% Iberian acorn-fed shoulder ham comes from free-range pure breed Iberian pigs that roam in liberty across the broad pastures of Southern Spain. They feed naturally on acorns, which give the ham its characteristic taste and some of its unique nutritional properties.
Gabriel Castaño has remained faithful to its origins, preserving the purity of the Iberian pigs and avoiding crossing them with other breeds. This procedure has ensured the preservation of a natural ecosystem where these pigs can grow. At the same time, the heathlands of the south of Spain provide the best food and nutrition for Gabriel Castaño Iberian pigs.
The front legs of our acorn-fed 100% iberian pig are used to make Gabriel Castaño’s Paleta Iberica. A unique product. These 100% Iberian pigs have been roaming freely during their two years of life and have a double montanera.
A perfect point of salt given by our natural drying process over more than 36 months gives as a result an excellent product with the perfect fat infiltration.
