Viña Arana Gran Reserva 2016
The first Viña Arana Gran Reserva from Rioja Alta , is a vintage characterised by drought, which gave a great heterogeneity in the grapes. The rains at the end of September had a very positive influence on the evolution of the vineyards, providing a perfect ripening of the berries.
The grapes entered the winery in a magnificent state of health and with an excellent balance between alcohol content and polyphenols, which allowed us to produce wines of great quality, with good polyphenolic structure and a magnificent aromatic typicity, key factors in the ageing wines and determining factors in our decision to produce the first Viña Arana Gran Reserva.
Viña Arana Gran Reserva in our history.
We began the harvest with the Tempranillo grapes and 17 days later we picked the Graciano from Montecillo, the last plot to be harvested.
All the grapes were transported refrigerated in small boxes to preserve their integrity. Alcoholic fermentation took place in tanks for 16 days for the Tempranillo and 18 days for the Graciano.
Malolactic fermentation took place naturally and, in March 2013, the selected wines were transferred to our own American oak barrels with an average age of 3 years. During their three-year ageing, they were racked by the traditional method every 6 months. In March 2016, the last coupage was made, blending both varieties to achieve the magnificent balance that characterises this first Viña
Arana Gran Reserva.
Food pairing
Especially recommended with all kinds of meats and stews, powerful Iberian cured meats, spicy fish, desserts with chocolate or red fruit topping. Perfect as an after-dinner drink.
Tasting Notes
Bigarreau cherry red colour, with a garnet rim. High aromatic intensity, with aromas of ripe red fruits, red berries, wild strawberry and black plum jam, which give way to the tertiary aromas of the careful ageing in wood: vanilla, cedar, tobacco, coffee, caramel and sweet pastry notes. On the palate, its initial freshness and structure, typical of the brand, predominate. Balanced, with soft, sweet tannins. Elegant and complex finish.
The base variety is Tempranillo (95%) with 5% Mazuelo from the El Palo and Las Monjas estates in Rodezno. Own vineyards planted on loam soils in 1973.

It is therefore a wine with freshness, intensity, sophistication and above all, a great name and ageing potential. In short, an excellent wine.

Preserving unopened Iberian ham
If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.
In this way the ham can last for months without any problems.
Preserving Iberian ham once it has been opened
When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.
Preserving whole cured meats
If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.
The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.
Preserving sliced sausages
The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
