890 Gran Reserva 2010
A complex wine, open and with a very serious bouquet. Full of aromas of cedar, fine woods, cigar humidor, blond tobacco and fine, almost creamy, toasted hints, which give way to notes of freshly ground coffee and old leather, with a liquor background of macerated plums and ripe picota cherries. A flavoured, elegant and direct wine, full of spicy notes which get stronger as you breathe, such as bay leaf powder, clove, black pepper, aromatic herbs and a fragrant touch of withered flowers.
A strong, powerful and lively wine.
One of the best of the 21st century. The key factors were very good weather, ensuring excellent vegetative and sanitary conditions right up to the end of the cycle, and low yields. This resulted in medium-sized, very loose bunches with small berries. In addition, there were frequent days with sunny mornings and cool nights, which helped the grapes to ripen slowly and evenly. One of the most Atlantic vintages of recent years, it has enabled us to obtain wines of great freshness and complexity, ideal for long ageing. Officially rated as Excellent.
Tempranillo (95%) and Mazuelo (2%) from our own vineyards in Briñas, Labastida and Villalba and Graciano (3%) from our Montecillo vineyard in Fuenmayor. The grapes, sourced from some of our oldest vineyards, were harvested by hand using 20 kg boxes and transported in refrigerated vehicles to the winery.
After gentle destemming and crushing, the musts underwent alcoholic fermentation for 18 days in tanks. We blended the Tempranillo and Mazuelo grapes in the vineyard and fermented them together, while Graciano was handled separately. Malolactic fermentation occurred naturally and lasted four months. After stabilisation over the winter, we selected the best batches which were then left to rest in barrels for six years with 10 traditional rackings. After the winter stabilisation, we selected the best lots that were transferred to barrels for six years with 10 traditional rackings.
890 Gran Reserva 2010
With regular tastings and analysis during this period, we selected the ones that best represented the character of this wine: 236 barrels that were bottled in March 2017 in 61,643 75 cl. bottles, 4,189 magnums and 149 double magnums. To preserve its aromas, this wine was not filtered before bottling.
It stands out for its medium garnet red colour, with an incipient iodine tinge on the rim of the glass. The nose reveals the characteristic notes of Rioja classicism: cherry jam, black plum compote, tobacco leaf, cinnamon, vanilla, pepper and chocolate powder. The refinement of its tannins and its gentle freshness lend this wine an elegant and pleasant mouthfeel. Classic Rioja bouquet, broad, complex, round and with an elegant finish. This Gran Reserva 890 has a long life ahead of it.
Gran Reserva 890 is our most special wine. Recommended with main courses with light sauces, iberian ham, meat stews with herbs and desserts with chocolate. It is ideal as an after-dinner drink.

Preserving unopened Iberian ham
If you have just brought home a piece of Iberian ham that you do not plan to open yet, it is important that you remove all the wrapping and hang it up, if possible in a cool, dry place, in order to preserve it.
In this way the ham can last for months without any problems.
Preserving Iberian ham once it has been opened
When we buy a leg of Iberian ham and we are going to start cutting it, it is important to save the layer and the first slices of fat that we will remove before cutting the ham itself.
Preserving whole cured meats
If you are one of those people who prefer to buy whole pieces of sausage such as salami, cured pork loin or chorizo, there are also ways in which we can help to keep these pieces in perfect condition.
The best way to preserve Iberian cured meats is to keep them hanging. The piece should be hung with the cut side down. To maintain its texture, cover the part that has already been cut with plastic film and secure it with a string or rubber band so that it is well sealed.
Preserving sliced sausages
The ideal way to preserve sliced cold meats with all their properties is to group all the slices together and stack them on top of each other, wrapping them in transparent film. They should also be spread out inside the envelope in which they were received. Once you have opened one of these sachets, you should consume it within a week.
